I have a couple of squash and zucchini plants... which means I have a ton of blossoms. My brother came over and I made him this quesadilla.... he was in heaven.
4 Zucchini or Squash Blossoms
1 Cup Shredded Monterey Jack Cheese
2 Flour Tortillas
2 Tablespoons Refried Beans
Washed and checked for ants...
Put them on paper towels to dry completely...
I buy the cook at home tortillas from Costco...
Cook on both sides...
Spread a very thin layer of refried beans...
Spread Cheese...
Place 2 Zucchini Blossoms...
Cooked well on both side...
