Fergie's Three Cheese Pesto Ravioli


Homemade Ravioli sound hard and scary?  It is so easy if you use won ton wrappers.  The filling could not be easier too.  You will be amazed at how easy and quick this recipe is.  You will wow your family and friends with this dish! 

1 Package of Won Ton Wrappers
2 Cups Ricotta Cheese
1 Cup Shredded Mozzarella Cheese
1 Cup Grated Parmesan Cheese
3 Tablespoons Pesto
1 Egg
Dash of Pepper
1 Egg White with 1 Tablespoons Water

2 Cups Marinara Sauce 
Grated Parmesan Cheese for Topping 


This is the brand of wrapper I used, but any will do... 


I covered my counter with plastic wrap.... 


Lay out half of the wrappers ... 


Mix the ricotta, mozzarella, parmesan cheese, egg, pesto and pepper... 


Combine well.... 


I used a small cookie scoop... 


Put 1 Tablespoon of the mixture in the middle of the wrapper... 


Combine the egg white and water... Brush the edges around the mixture... 


Place another wrapper on top and press down around the mixture... 


Bring a large pot of water to a rolling boil... add a pinch of salt... 
Cook 4-5 ravioli at a time... as soon as they float to the top they are done!!! 


Heat the marinara sauce... 


Done, Done, Done... Simple. 






Fergie's Cinnamon Roll Cake


Ok... seriously?  This cake is bad, I mean really really bad!  Nothing diet or healthy about it, just good ole' fashioned buttery, sugary, cinnamony goodness. 

3 Cups Bread Flour
1 Tsp Kosher Salt 
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Cup Skim Milk
1/2 Cup Orange Juice
3 Eggs, Room Temperature
1 Tablespoon Vanilla
1/2 Cup Melted Butter 

Cinnamon Goo 

2 Sticks Unsalted Butter, Room Temperature
1 Cup Brown Sugar 
2 Tablespoons Flour 
2 Heaping Tablespoons Cinnamon 
1 Tablespoon Vanilla 

Cinnamon Frosting

1 Cup Powdered Sugar
2-3 Tablespoons Milk
1 Teaspoon Vanilla


Combine your dry ingredients.... 


Add the wets... 


Allow the batter to rest for at least 15 to 20 minutes... This is usually when I turn my oven on to preheat... Set your oven to 350 degree... 


This is the goo..... Oh the gooo.... so much butter and sugar.... 
Combine the butter, brown sugar, flour, vanilla and cinnamon.... 


Mix until smooth!


I used an 8x11 glass pan.  Make sure that you are generous with the vegetable oil spray... 


Pour the batter.... 


Spoon the Goo over the batter.... 


Use a knife and swirl the goo... 


This is what the batter should look like... 





Bake for 40-50 minutes... 


In the meantime make the frosting... 


Whisk until smooth... 


Pour over your hot cake... 






Fergie's Braised Chicken & Peppers




My husband and I don't always polish an entire bottle of wine in one sitting... 
(Strange huh??? ) So I like to cook with whatever we are not going to use.  This chicken dish 
is tender, juicy, and very flavorful! I hope you enjoy it as much as we all did! 

8 Chicken Thighs
2 Tablespoons Olive Oil 
Salt & Pepper to Taste 
1 White Onion, Sliced 
1 Red Bell Pepper, Sliced 
4-6 Garlic Cloves, Rough Chopped 
2 Cups Chicken Stock 
1 Cup White Wine (Sweet or Dry will work) 
Fresh Cilantro 



Slice the peppers & onions... 


Using a heavy bottom pot heat the oil and brown 4 pieces of chicken at the time... 


Remove the chicken pieces until they are all browned on both sides... 
They do not have to be fully cooked... 


This is what you pan should look like... Remove excess grease... 



Add the peppers, onions and garlic... 


Gently cook for about 2 minutes... 



Add the broth... 



Add the wine... 


Deglaze the pan for about 4-5 minutes.... 





Add the chicken pieces... Simmer for 20 minutes, covered... 


Serve over some steamed jasmine rice and garnish with fresh Cilantro 




Fergie's Whole Wheat Ricotta Pancakes

I don't know if you have noticed but my family is a bit obsessed with good pancakes.  I am always on a quest for the ultimate pancake.  I stopped using boxed mix years ago when I read an article about deadly bacteria in mixes.  I love making them from scratch because I control what goes in that bowl! Whole Wheat pancakes tend to be dry and frankly a bit boring.  These came out amazing... the ricotta cheese really makes them pot!  They are wonderful, fluffy and creamy! 

1 1/2 Cups Organic Whole Wheat Flour 
1 1/2 Cups Organic Bread Flour 
1 1/2 Teaspoons Baking Powder 
1 1/2 Teaspoons Baking Soda
1 Teaspoon Kosher Salt 
1 Teaspoon Cinnamon
 2 Tablespoons Vanilla
3 Tablespoons Sugar
1/2 Cup Ricotta Cheese
2 Eggs
1/4 Cup Vegetable Oil
1 1/2 - 2 Cups Skim Milk (or any milk alternative, if using
soy or almond use half milk and half water, soy and almond tend to be on the thick side)
Oil for cooking 



Combine the flours, baking soda, baking powder, salt, sugar, cinnamon and vanilla. 


Add the ricotta, oil, and eggs.  Begin to whisk in the milk... don't use all the milk unless you need to.


You want to end up with a nice thick pancake batter.  Allow to rest for at least 10 minutes before using. 


Heat the pan/griddle with a bit of oil and cook until bubbly...
