Fergie's BBQ & Sausage Pizza

I was trying to make my family some Super Bowl food that was a tad healthier than the norm... This  pizza was a huge hit and very easy to make... enjoy!!!

1 1/2 Cups Organic Whole Wheat Bread (I used Bob's Red Mill)
1 1/2 Cups Bread Flour
1 1/4 Cups Warm Water
3 Teaspoons Yeast
2 Teaspoons Sugar
1 Teaspoon Sea Salt
2 Tablespoons Olive Oil
1 Cup BBQ Sauce
3 Links Turkey Italian Sausage (Cooked)
4-6 Cups Cheese, I used 3 Cups Fontina and 3 Cups Mozzarella
1/2 Red Onion, Thinly Sliced

Measure the 2 Flours...

Combine the warm water, yeast and sugar...

Cover and set aside... this is your starter...
Allow to sit for at least 5 minutes...

This is what hubby does while I cook... Play XBox... !!!

This is what I was listening to ... The Best of Berlin (Riding on the Metro)

Add the salt and Olive Oil

When the yeast mixture is foamy and bubbly...

Add to the flour and mix with your hands until combined...

This is what it should look like...

Place on clean, floured counter... Knead for at least 10 minutes...

You should end up with a smooth, soft ball of dough... spray the inside of a large bowl and place the dough... Cover and allow to rise in a warm dark place for at least 1 hour.
Heat the oven to 450...

Spray a large sheet pan with vegetable spray ... Dump dough and using your fingers... stretch the dough out... Cover with large kitchen towel while you cook the sausage...

Heat pan and cook the sausage...

Spread the BBQ sauce evenly over the dough...

Get the cheeses ready... always taste so much better when you combine different cheeses...

Spread the sausage... and the sliced red onion...

I like to sprinkle just a bit more cheese on top...
Bake for about 20-30 minutes...
I always take pizza out after 25 minutes... using a
spatula I check the underneath of pizza... you will see if the
dough is uncooked...

This pizza is so good!!!
