Fergie's Arugula Pesto Grilled Cheese Sandwich

I grow Arugula every spring and it grows like a weed!!!  I LOVE IT! 

I make enough pesto to last me a year sometimes!!!  I will include the link to the pesto 

recipe.  My family loves grilled cheese sandwiches... especially "fancy" ones

like my son calls them.  This recipe is simple and taste out of this world! 

Sourdough Bread 

Combination of Shredded Cheeses

Fergie's Arugula Pesto

Vegetable Spray 

I used a combination of imported extra sharp cheddar, mozzarella and Munster. 

Spread to pieces of bread with pesto... 

Sprinkle the cheese... 

Assemble the sandwich and spray one side generously with Vegetable Spray... 

Place on hot panini press and spray the other side... 

Cook until nice and crispy... !
