It has been such a chilly day, kids are either getting over being sick or headed there. I was craving something rich and hearty. This soup really hit the spot and best of all the kids loved it. Yet another simple dish that your family will love you for!
1 Fennel Bulb, Diced
1/2 White Onion, Diced
1 Pound Ground Turkey or Ground Chicken
3-4 Tablespoons Olive Oil
1 Teaspoon Kosher Salt
1 Teaspoon Ground Pepper
8 Cups Organic Chicken Broth
1 14-Oz Can Diced Tomatoes
2 Cups Carrots, Small Diced or Thick Shred
1/2 Cup Pearl Barley
1/2 Cup French or Green Lentils
1 Teaspoon Oregano
1 Teaspoon Chile Powder (optional)
1 Bay Leaf
1 Whole Fennel Bulb and 1/2 White Onion diced...
Heat the oil and add the fennel and onions...
Add the turkey...
Add the salt and pepper... Cook for about 4-5 minutes...
This is the barley and the lentils...
Organic chicken broth...
Cook until slightly brown...
Add the barley, lentils, tomato....
I know you guys have seen me use bagged shredded carrots... I am a huge fan... makes my life so much easier!!!
Add the oregano and the pepper...
Add the bay leaf, bring to a boil, reduce heat to med/low, cover and simmer for 35 minutes...
This soup is so hearty and delicious!!!
