My husband loves beef stew... this is his favorite version of the classical dish. You can serve over mashed potatoes, white rice, brown rice or even quinoa. It is a dish you can make in a hurry in your pressure cooker or allow to simmer in a crockpot all day until tender.
2 Pounds Beef (Cheap cuts are the best)
1 Onion, Sliced
1 Fennel Bulb, Sliced
6-8 Carrots, Peeled and Chopped
1 Red Bell Pepper, Sliced
1/4 Cup Parsley, Chopped
1 Small can of Diced Tomato's with Juice
2 Cups Beef or Chicken Stock
2 Tablespoons Lawry's Seasoning
2 Tablespoons Soy Sauce
1 Teaspoon Oregano
2 Tablespoons Corn Starch Mixed with 4 Tablespoons Water
Chop up the meat and veggies... throw everything except for the cornstarch and water mixture.
If using a pressure cooker set for 35 minutes.... If using your crockpot set for 6-8 hours.
About 30 minutes before the stew is complete add the cornstarch mixture until thick!
