I bought a Turkey Tenderloin for $4.50 !!! I was so excited about the price I bought 5!!! My husband mentioned earlier that I had not made Pozole in a while, so I made this. I have made it with Chicken and it was lovely but the taste is very different being this one is made of turkey!
Much healthier alternative than the traditional pork...
1 Turkey Tenderloin
1 White Onion, Sliced
4 Garlic Cloves
1 Teaspoon Oregano
3 Tablespoons Powdered Knorr
1 Teaspoon Ground Pepper
10 Cups Water
5 Dried California or Anaheim Peppers
1/2 White Onions, Chopped
1/2 Bunch of Cilantro
1/2 Cabbage, Thinly Sliced
Lemon
Tapatio
When you see these babies on sale... buy them, buy a lot of them!
This one is plain, but the have marinated one's ... buy them all!
They are a great deal and go a long way!
Slice up your onions...
Begin boiling the water and add the turkey, onions, oregano and the powdered Knorr...
Add the garlic... bring to a boil and then reduce to a simmer for 25 minutes...
After about 20 minutes reserve 4 -5 cups of the broth for the chile...
Add the chiles to the broth and simmer for about 10 minutes until fully reconstituted and bright red!
To the main pot add 2 cans of hominy (drained)
Peel and slice the carrots... add to the broth...
Remove the turkey and allow to cool...
Do not shred into small pieces... better if the pieces are a bit thick...
Add the turkey back to the pot and continue to simmer...
Add the chiles and the broth to the blender....
Blend until smooth... at least 2-4 minutes...
Place a strainer over the pot and strain the chile....
Simmer for another 5 minutes....
Prep your toppings...
