Fergie's Stuffed Baby Portabella Mushrooms



I found these Stuffing Portabella Mushrooms at Trader Joes... My husband loves Mushrooms... any way you give them to him.  He is gonna flip when he tries these!!!

6 Stuffing Portabella Mushrooms
2 Italian Sausage Links (I used Turkey Sausage) 
1 Cup Parmesan Cheese, Grated
1/2 Cup Mascarpone Cheese (Or Cream Cheese)
1/2 Cup Panko Bread Crumbs
1/2 Teaspoons Fresh Cracked Pepper 
1/2 Teaspoon Crushed Pepper 


Heat the oven to 375... 


Flip your mushrooms and carefully remove the stems... save them!!! 




Chop small... 


Heat your skillet and add the mushroom stems ... 


Cook for about 5 minutes... 



In a bowl combine the sausage with mushroom stems, panko, parmesan, and Mascarpone ...


These are Panko Crumbs... 


Add the two peppers... 


I use my hands to mix well... 


I used a medium cookie scoop (to ensure equal measurements) ... 


Carefully stuff the mushrooms... 


I lightly sprayed the pan... 


Line up the mushrooms and put a bit more cheese on top... 


Bake for 25-30 minutes... 



Allow to cool a bit in the pan...
