Fergie's Asian Meatball & Vegetable Soup


I seriously LOVE eating healthy!  I especially love making healthy food taste good.  This soup is packed with protein and veggies.  The flavor is out of this world.  

Soup Base:
12 Cups Water
3 Tablespoons Knorr Chicken Bouillon
1 Onion, Sliced 

Meatball Recipe:
1 Lb Ground Turkey Breast 
1/2 Onion
3 Green Onions
1/2 Inch Fresh Ginger
4 Garlic Cloves
3 Tablespoons Cilantro 
3 Tablespoons Low Sodium Soy Sauce
2 Tablespoons Oyster Sauce
1 Teaspoon Chile Flakes
1 Teaspoon Pepper
1/2 Cup Panko Bread Crumbs

1/2 Cabbage, Sliced
2 Cups Shredded Carrots
2 Cups Broccoli, Chopped
1 Cup Edemame


I use fresh Ginger as often as possible... Just peel the outer part... 


Combine the half onion, green onions, ginger, cilantro, garlic, soy sauce, pepper, crushed pepper flakes,  and oyster sauce.  Blend in food processor... 


Combine the turkey, panko, and paste... 


This is what the mixture should look like, cover and allow to rest for a few minutes while you prep the veggies... 


Cup the cabbage, broccoli, onion (I cheat and buy the carrots shredded) 


Bring the water to a boil and add the onions and knorr... 


Using a small cookie scoop start making your meatballs... 


This recipe makes about 50 meatballs... (I know!!! ) use them all or freeze half for another dinner... 


Once the broth comes to a boil... add the meatballs and cook for 10 minutes... 


After 10 minutes add all the veggies, cover and cook for 5 minutes... 








We use this over asian soups and noodles... it is WONDERFUL!!!  You can find it 
at any asian market...
