Sweet Corn Salad

Fresh and easy.  No need to cook the corn !

2 Ears of Fresh Sweet Corn, Corn Kernels Cut Off
2 Roma Tomatoes, Diced
1/2 Cup Cilantro, Chopped
1/2 Red Onion, Chopped
Juice of 1 Lemon
1 Tablespoon Light Olive Oil
Salt and Pepper to Taste 

Cut all the corn kernels off... 

Juice your lemon and set the juice aside... 

Combine all ingredients... 

Let in sit in the refrigerator for at least 30 minutes...
