Tomato Stuffed Red Peppers

Red Bell Peppers are one of my favorite veggies.  I am always looking for special ways to prepare them.  This side dish is ridiculous and simple... Can be a main course if you would like too. 

2 Red Peppers
2 Roma Tomatoes
4 Tablespoons Olive Oil
8 Tablespoons Mozzarella Cheese
8 Tablespoons Parmesan Cheese 
Salt & Pepper

Slice your peppers lengthwise...

Sprinkle a little olive oil ... 

Cut the end off of your tomato and slice in half lengthwise... 

Drizzle a little olive oil.... 

Put a couple of Tablespoons of each of the cheeses on top of the Peppers and Tomatoes... 

Put in oven safe dish covered in foil... I also spray some Cooking Spray to prevent sticking... 
Bake at 375 for 45.
