Ejotitos con Huevo (Green Beans & Eggs)




This is a dish I ate growing up in my Chihuahuense home.  It is a very simple dish served in burritos. I used fresh green beans from my beautiful CSA box.  

1 Cup Fresh Green Beans, Cut into Small Pieces
1 Small Onion, Chopped
1 Roma Tomato, Diced
1 Whole Pepper, Thinly Sliced, (I used 3 Banana Peppers & 1 Serrano)
3 Tablespoons Cooking Oil, I used Sunflower
1/2 Cup Shredded Monterey Jack Cheese
3 Eggs, Lightly Scrambled
Flour Tortillas (I used the kind you cook yourself, Costco)


Chop all your vegetables and have ready... 


Fresh Green Beans...

Banana Peppers and Serrano... 


Heat the cooking oil and add the onions and the chiles....Cook for about 2-3 minutes...



My Daughter was cooking the tortillas while I made the green beans...


Add the green beans and cook for 5 minutes... 


Add the tomatoes and cook for another 2 minutes... 



This is what it should look like... 


Scramble your eggs...


Add the eggs to the green bean mixture... 


Add the cheese ...


Scramble all together... 


Ready to make the burritos... 


Good, quick and healthy!
