Caprese Stuffed Zucchini


I have so much zucchini and as long as I keep making it in fun and interesting ways my kids will eat it!  So hear you go!!!

Here is what you will need... 

1 Large Zucchini (2 Medium or 4 Small)
You need 4 halves, seeds removed
1 Tomato, Diced
4 Basil Leaves
1/2 Cup Shredded Mozzarella
Olive Oil
Salt & Pepper



Remove all the seeds and create a well...

Drizzle a bit of oil in a foil covered pan... 

Arrange the zucchini... 

Add the diced tomatoes... 

Cut your Basil... 

Spread over the tomatoes... 

Sprinkle the cheese, salt & pepper... 

I baked them at 350 for 15 minutes,
400 for 10.  I used a Toaster Oven, it
is hot and avoid turning the oven on
at all cost!
