Curry Sweet Potatoes



I will be honest and say I am not a fan of Sweet Potatoes... this is the only way I am able to eat them.  This dish is simple, vegetarian and taste of home!  

1 Large Sweet Potato, Peeled & Diced
1 Whole Onion, Diced
4 Carrots, Peeled and Diced
2 Potatoes, Peeled and Diced
4 Tablespoons Sunflower Oil
2 Teaspoons Curry Powder
2 Teaspoons Cumin
2 Teaspoons Paprika
2 Teaspoons Chile Powder
2 Teaspoons Cumin
2 Tablespoons Tomato Bouillon
3 Cups Water
1/2 Cup Chopped Cilantro


My Sweet Potato yielded about 5 cups!


Heat the oil in a heavy pot and add the sweet potato and the onion...
Cook for about 5-6 minutes on Med/High



Add the carrots and cook for about 5 minutes... 



Add all of your spices ...


Cook the spices for about 2-3 minutes... 


Add the water and simmer for about 10-12 minutes... 



Add the potatoes... Simmer for 5 minutes... 





Add the cilantro and turn heat off... leave covered and let it sit 
for at least 10 minutes before serving...
