Fergie's Ricotta Waffles


Love making everyone homemade waffles on weekend mornings... they can get a bit boring though... check out what I did to this batter...Creamy, Crispy, Heaven on a plate! 

3 Cups Flour
3 Teaspoons Baking Powder
3 Teaspoons Baking Soda
1 Teaspoon Kosher Salt
1-2 Teaspoons Cinnamon
1/4 Cup Raw Sugar 
3 Eggs, Room Temperature 
1 Cup Ricotta Cheese
1/2 Cup Unsweetened Applesauce
1 Tablespoon Vanilla 
1/4 Cup Melted Unsalted Butter 
1/4 Cup Vegetable Oil
1/4 Cup Maple Syrup 
2 - 21/2 Cups Milk (I used Skim) 




Combine all the wet ingredients and slowly add the milk until you rich a batter that is a bit 
thicker than pancake batter... you may not need the whole 2 1/2 cups of milk. 


Heat and spray the waffle iron... 


Pour your batter and cook your waffle...
