If my son could I think he would eat Meatloaf everyday... anytime I ask him what he would like for dinner he always asks for Meatloaf!!! I love making it because it's so simple! I hope you enjoy it just as much as Jacob does!!! This recipe is a double duty recipe ... you will see why.
2 Lbs Ground Turkey
2 Fennel Bulbs, Chopped
1/2 Onion, Chopped
4 Tablespoons Olive Oil
2 Celery Stalks, Chopped
1 Teaspoon Kosher Salt
1/2 Teaspoon Ground Pepper
1 Teaspoon Raw Sugar
1 Red Bell Pepper, Chopped
1 Cup Panko
1/2 Cup Unsweetened Applesauce
1/2 - 1 Parmesan Cheese, Grated
1 Egg (Room Temperature)
3 Teaspoons Garlic Salt
1/2 Teaspoon Oregano
I am having a love affair with Fennel.... LOVE LOVE LOVE this stuff!!!!
Chop ...
1/2 Onion ...
Chop...
Heat the oil and add the fennel, onion, salt, pepper, and raw sugar...
Cook these on med/low for 15-20 minutes until nice and caramelized...
Chop your celery small and set aside for now...
Once your fennel and onion mixture is nice and tender remove half and set aside for your side
dish...
(remember I promised double duty)
To the mixture left in the pan add the celery and cook for another 2 minutes...
In the meantime chop your bell pepper...
Add the bell pepper to the mixture and cook for another 2 minutes...
In a large bowl start combining ingredients...
Add the 2 pounds of turkey, panko, veggie mixture,
parmesan cheese, applesauce, egg, oregano and salt
Nothing like using fresh, organic ingredients!!!
Gently mix, if you over mix your meatloaf will be tough...
Allow the mixture to sit so flavors can marry...
Spray the inside of a large loaf pan...
Pack the meatloaf in the pan... Bake the meatloaf in a 400 degree oven for 1 hour.
You can also make these into burgers!!!! I don't recommend you BBQ then because they will be soft...
a lightly greased hot pan works best!!!
This makes an amazing burger!!!
This meatloaf is soft, juicy, and succulent!!!
