Fergie's Awesome Crab Cakes


There has always been a very basic recipe for crab cakes... This in my opinion is the perfect amount of all the classic ingredients with a few of my own... 

1 Pound Lump Crab Meat 
1/4 Cup Mayonaise
3 Tablespoons Dijon Mustard
1 Egg
Juice of 1/2 Lemon
1 Teaspoon Old Bay Seasoning
1 Teaspoon Ground Pepper
1 Teaspoon Spanish Paprika
1 Teaspoon Mustard Powder
1/2 Cup Shredded Carrot
2 Green Onions
1 Celery
1/4 Cup Italian Parsley
1/4 Cup Red Pepper
1 Cup Panko Bread Crumbs 
Vegetable Oil for Cooking 



Combine the mayo, mustard, seasonings and lemon juice... 


Mix well and add the egg... 


In the food processor add mix the Carrots, Green Onions, Celery, Parsley and Red Pepper... 


Process until you achieve small pieces... 


In a large bowl combine the Dressing, Vegetables, Panko and the Crab Meat... 


DO NOT OVER MIX... REPEAT AFTER ME... DO NOT OVER MIX... 


The mixture should be moist... allow to sit for a few minutes... 


I buy the crab at Trader Joes... 1 can is about $ 8.99 ... 
That is pretty cheap if you think about it!!! 


Make your cakes, heat some oil in the pan and add the cakes to the hot pan... 

Allow to cook until golden brown on both sides... about 3-4 minutes on each side... 




Yeah... Jake like dinner...
