Fergie's Pancit


Pancit is a very popular  Filipino dish ... which I happen to love!!!  I grew up across the street from a wonderful Filipino Family who's "Grandma" lived with them.  Every time we had a party Grandma would come over with 2 massive aluminum foil containers, one had Pancit and one had Lumpia.  I could seriously eat Pancit everyday for the rest of my life and be a happy girl!!! I have had at least 20-30 different types of Pancit and they have all been different.  This is my take on Pancit.... 

2 Boneless, Skinless Chicken Breast 
8 Cups of Water 
2 Tablespoons of Knorr Chicken Bouillon
2 Tablespoons Soy Sauce
1 Teaspoon Pepper 

12-14 Ounces Rice Sticks
3 Celery Stalks, Thinly Sliced
2 Cups Shredded Carrots
1 Onion, Thinly Sliced
1/2 Bag Frozen Petit Peas
4 Tablespoons Oil
1/4 Cup Low Sodium Soy Sauce
1-2 Cups of the Broth Left Over From Cooking the Chicken 
1/2 Teaspoon Ground Pepper 


Combine the chicken, water, soy sauce, and pepper... bring to a boil and cook for 8-10 minutes... 



Remove the cooked breast and allow to cool... 

Keep the broth to a simmer and add the rice noodles a little bit at a time... Cook for 2-4 minutes ... 


Remove the noodles and cut using kitchen shears... 


Repeat until all the noodles are cooked and cut... 


Heat the oil in a pan

Once the pan is hot add the onions, carrots, and celery... 


Cook for 2 minutes... 


Add the shredded Chicken... 


Cook for another 2 minutes... 


Add the soy sauce.... 


Add the noodles... 


Turn the heat to medium and start adding broth... toss the noodles gently with tongs... 


Add the frozen peas... 


These are my absolute favorite.... sweet and tender!!! 


Turn the heat off and cover... allow to sit for 2-3 minutes... 


Toss one more time...
