Fergie's Red Pepper Parmesan Risotto


Do you want to impress your family?  Risotto is the way to do it! Luxurious taste and super easy to make! 

1 1/2 Cups Arborio Rice 
4 Tablespoons Red Onion, Minced 
4 Tablespoons Red Pepper, Minced 
3 Tablespoons Unsalted Butter 
1 Teaspoon Salt
1 Container Hot Vegetable Stock 



Add the rice, onion, and butter to the hot pan and cook for about 3-4 minutes... 


You are not trying to brown the rice, you are just beginning the cooking process...


This is my favorite Vegetable Stock to use... it is rich and thick and full of delicious flavor... 


After you have heated the stock begin to ladle it into the rice continuously stirring it... 


This stock is amazing!!! 


Keeping the heat at about medium, ladle stock when it is absorbed... 


This is sometimes a long process... Keep adding stock and keep stirring... 


When the last of the stock has been used turn off the heat and add the cheese... 


Gentle stir in and YOU ARE DONE! 



BEAUTIFUL, CREAMY, RISOTTO...
