Fergie's Cauliflower Cheesy Frittata


If I make it into a Frittata... they eat it!!!  I used a whole head of cauliflower for this recipes.... so tasty, can't even tell its jam packed with veggies!!!

Fennel & Onion Mixture from the Fergie's Fennel & Red Pepper Turkey Meatloaf recipe
1 Whole Head Cauliflower, Rough Chopped 
5 Tablespoons Olive Oil 
Extra Sharp Cheddar Cheese
Parmesan Cheese
5 Eggs (room temperature) 
1/2 Cup Half & Half 
1/4 Cup Parsley, Chopped 



This is half of the fennel & onion mixture left over from the meatloaf recipe... 


Heat the oil in the pan and the cauliflower and fennel mixture... 
Cover and cook for 10 minutes, stirring every few minutes. 






This is what it should look like... 


Turn the heat off and add the cheddar... 


Add the egg and half & half mixture... 


Top with Parmesan... and bake at 450 for 15-20 minutes... 


Once done... switch over to broiler and cook for 3-4 minutes... set a timer and check every minute....
YOU WILL BURN IT IF YOU DON'T DO THIS!!!


Once the top is bubbly and lightly brown, remove from oven ... 


Chop the parsley ... 



Sprinkle over the pan...
