Stuffed Asian Collard Greens

I had a few fresh Collard Greens and it was too hot to make soup.  I have been waiting for the leaves on my grapevine to get big enough to stuff... but they just aren't.  So I though, why not? This is what I came up with.

8-10 Collard Green Leaves
1 Pound Ground Turkey, Chicken, Beef or Pork
3 Green Onions, Diced
1 Carrot, Shredded
1/2 Cup Rice
3-4 Cloves of Garlic
1/4 Cup of Soy Sauce
2 Tablespoons Oyster Sauce
1 Teaspoon Sesame Oil
2 Teaspoons Ginger, Minced

Combine all the ingredients except for the Collard Greens in a large bowl.


Place all your leaves flat and get ready to stuff.

I used a cookie scoop so I would have the same amount of meat in every pocket.

Fold into itself.

If you have small leaves you can use two... like this.

Begin arranging them face down in steamer pot.


Make sure you add plenty of water to the steamer because you will be steaming for 40 minutes.  Set the timer for 40 minutes and check the water every 10-15 minutes.  After 40 minutes... leave covered and let them sit for 15 minutes.

This is what they look like when they are done.

They are pretty and loaded with a delicious center!
