CHICKEN SOUP

So my kids have been sick on and off for over a month now!!! This seems to be the only thing that puts a smile on their faces... I thought I would share. It is a basic recipe my mom would make for us... But just kicked up a notch! Here is what you will need:

1/2 Chicken or 2 Whole Chicken Breast
1 1/2 Onion, Sliced
5-6 Carrots
3-4 Celery Stalks
3-4 Cloves of Garlic, Chopped
1/2 Head of Cabbage, Sliced
1/4 Cup of Cilantro
1-2 Cups Garbanzo Beans, Canned or Cooked Fresh (Mine are fresh... ;)
10 Cups of Water
4 Tablespoons Salt, or Powdered Chicken Bouillon
2 Teaspoons Oregano
2 Teaspoons Dried Parsley
1 Teaspoon Ground Cumin
1/2 Teaspoon Chili Flake






2 Tsp Oregano, 2 Tsp Parsley, 1 Teaspoon Cumin, 1/2 Teaspoon Chile Flake

Fresh Cooked Garbanzo Beans... or you can use 1 can Rinsed and Drained



Bring 10 Cups of Water to Boil.... Add the 1/2 Chicken, Onion, Garlic, All Seasonings, Pepper and Salt or Bouillon.
Simmer on Medium High for 1 Hour.  After the hour of cooking, remove Chicken and Shred.

Put in the remaining ingredients, Garbanzo Beans, Carrots, Celery, Cilantro, Cabbage and check for salt.

Simmer for about 15-20 minutes

Because of all the onions, oregano... this soup really is like medicine!!!


You will end up with a beautiful, clear broth, and a taste like no other!
