Asian Tofu Peanut Noodles

This taste amazing, easy to make, and you can serve it Hot or Cold!!!
I used Brown Rice Pasta, but you can use any kind. I am always looking for ways to add some protein into my meals, so I added some Tofu. Enjoy!!!

1 Block of Firm Tofu, Crumbled
1 Package Brown Rice Pasta
4 Green Onions, chopped
1/2 Red Pepper, Chopped
4 Stalks of Celery, Sliced
4 Carrots, Thinly Sliced
1 Head of Cabbage (I used Purple for Color), Thinly Sliced
1 Zucchini, Sliced
1/2 Bottle of Asian Peanut Dressing
2 Tablespoon Soy Sauce
1 Teaspoon Sesame Oil
1 Teaspoon Asian Hot Sauce
1 Teaspoon Ginger

Cook Your Pasta

\
Saute Green Onions, Red Bell Pepper and Crumbled Tofu... Cook until dry, about 10 minutes.

In a bowl combine Ginger, Hot Sauce, Sesame Oil and Soy Sauce.

Add to Tofu and cook for about 2-3 minutes.

Add the rest of your veggies and cook for a couple of minutes.

I add about 1/2 a Bottle of Peanut Dressing.

Drain your noodles... I cut them with Kitchen Shears

Combine EVERYTHING in a big bowl.

Serve Hot or Cold.
