Beet Greens with Cannellini Beans

My Harvest2U box included Beets with the Greens attached.  I love this because it's like getting 2 veggies for the price of one.  My kids will usually eat anything that has garlic and cheese... and the 2 in combination are even better.  Beets are currently in season... so they are easy to find and cheap. Here is a delicious recipe I came up with driving home yesterday.  The whole family loved it.... even my picky 13 years old!!!


Here is what you will need...

2 Bunches of Washed, Steamed, and Chopped Beet Greens
1/2 Onion, Sliced
4-5 Cloves of Garlic, Chopped
1 Can Cannellini Beans, Drained and Rinsed
Shredded Provolone Cheese (optional)






Althought the stems are edible they can be tough and a little bitter.  So after you have rinsed them, lay them down on the cutting board and just cut along the steam.

It should look something like this.


In a hot pan heat some oil (about 3-4 Tablespoons) and cook the onions and garlic for about a minute.

Add the greens and salt and pepper to taste.

Drain and rinse your beans.

Add them and cook for about 2 minutes

Add your shredded cheese.... just a little and cheese is totally optional



Awesome... Garlic... Smells and Taste AMAZING!!!
