VEGGIE PACKED TURKEY MEATLOAF

My kids love meatloaf... I know huh???? I don't eat beef and my kids eat a very limited amount of beef as well... I am definitely a fan of ground chicken breast or ground turkey breast.  I have been making this meatloaf for years and this is the first time I actually measured... You can also shape this into meatballs and bake them the same way.

VEGGIE PACKED TURKEY MEATLOAF

2 Pounds Ground Turkey Breast or Ground Chicken Breast
3 Slices of Fresh Bread, crumbled in the food processor
1/2 Onion, minced in the food processor
3 Carrots, minced in the food processor
1 Potato, minced in the food processor
4-6 Cups of Spinach, minced in the food processor
1/2 Bunch of Parsley, minced in food processor
4 Tablespoons Dijon Mustard
2 Teaspoon Italian Seasoning
2 Tablespoons Lawrys Seasoning Salt
1 Tablespoon Dry Parsley
Pepper to Taste



Throw everything in a bowl... do not over mix.

I spray 2 pans with Olive Oil... divide mixture evenly between 2 loaves.

My husband likes his with Ketchup....

Bake the loaves for about 30-45 minutes.

I serve with some veggies and some mashed potatoes!!!


This meatloaf is so moist and flavorful!!!



Eat one meatloaf and make meatloaf sandwiches with the other one!!
