Roasting Squash (Spaghetti & Butternut)

My kids are not fans of Squash.... So I love that I have found at least 2 ways I can get them to eat it and either not know or not mind because it taste so yummy!!! My Harvest 2 U box this week had 2 beautiful Butternut Squash.  Here is what I do... super simple, healthy & easy!!!

Take a small knife and puncture 3 times

Do the same with the Butternut

Place in a pan.... yep... just like that... no water... no oil... no salt.  Place in a preheated 400 degree oven for 45 minutes to an hour... After 45 minutes check it by sticking a small sharp knife... if it goes right through... it is done.

They should look just like this.

Slice right down the middle and scoop the seed center.


This is pure Butternut Squash goodness!!! I use this to make puree... I add it to pancake batter, waffle batter, mac & cheese, sweet bread, risotto, soup, all kinds of good stuff!!!

As with the Butternut Squash scoop the seed center.

Take a fork and shred the squash

Yummy goodness... I heat this up in the Microwave with some vegan butter and use in lue of pasta... Super delicious and HEALTHY!!!
