Kids were "starving" as usual... So I had to act FAST!!! This is always a favorite in the Ferguson Home... Seriously 10 MINUTES!!! I mean it!
1 Box Pasta
2 Roma Tomatoes
1 Cup Basil
4 Cups Spinach
2-5 Cloves of Garlic (I used 5)
Parm, Roma, or Pecorino Cheese
Olive Oil
I usually seed tomatoes.. just don't care for the juice part of the tomato...
Slice down the long way and take a spoon and scoop up out the center of the tomato.
Stack all the leaves and thinly slice.
Rough chop the spinach
My cheese was a little hard, so I just pulsed it in the food processor.
While your pasta is cooking.... Heat the Olive Oil ...
Add tomato and garlic, cook for about 1 minute
Add the basil and the spinach. Cook for about 1 minute.
Drain Pasta.
Add the pasta to the pan... and salt & pepper to taste. Drizzle with some olive oil .
Turn the heat off and throw in the cheese.
My baby is happy!!!
Simple... Light... and Packed with Flavor.
