Sharons Buns

HA HA HA... I love Sharon's Buns.  There... I said it!  My fab neighbor Sharon makes these on special occasions and they are not good, they are spectacular!!! These are the only other woman's buns my husband is allowed to put his hands on.  They are easy to make and great for potlucks... you will be as famous as Sharon if you bring these to the party!!!  Here is what you will need:

12 Dinner Rolls, the larger kind (I bought these at Target, Vons Bakery Rolls work the best)
2 Small Cans Tomato Sauce
1 Container Soft or Silken Tofu
4 Hard Boiled Eggs
3-4 Cups Sharp Cheddar Cheese, Shredded
3 Green Onions
Salt and Pepper to taste

Open the tofu container and drain the liquid. In a large bowl crumble the tofu using your hands.

Add the onions, chopped.

Add the tomato sauce

Add the cheese

Add salt and pepper to taste and mix well.

Peel your eggs and chop

Add the eggs and fold in

This is what your mixture will look like .

Slice your roll with a bread knife but don't go all the way through.

Scoop out the top and bottom

I use a medium cookie scoop... to ensure they are all uniform

This is what it should look like

Wrap in foil and set on a cookie sheet

Bake in center rack @ 350 for 30-40 minutes. This recipe yields exactly 12 stuffed buns.

When you open these little foil packs you have a toasty bun with gooey cheesy goodness.
These are vegetarian... to make them vegan substitute with Vegan Cheddar Cheese and omit the egg. You can also make these before you go camping... throw them on top of the BBQ and turn often.
