Crusted Salmon

I had Salmon and was not sure what to do with it.  The kids are usually pretty adventurous (except Jacque) so I played around and came up with this delicious concoction... !!!

CRUSTED SALMON

1 Cup Mayo
1/4 Cup Dijon Mustard
1 1/2 Cups Baby Spinach
Garlic, a lot of it.... you know me!!!
1/2 Teaspoon Pepper
1/4 Teaspoon Oregano
1/4 Cup of Plain Bread Crumbs
6 Pieces of Salmon



I buy the Salmon frozen and individually wrapped. To defrost put in a bowl with tepid water.

In the food processor put all ingredients except the bread crumbs and the fish....

Pulse until smooth

Spray pan with Olive Oil Spray or PAM

Put fish skin side down and pat fish dry...

Spread about 2-3 Tablespoons of mixture on each piece of fish.


Should look like this.

Sprinkle with bread crumbs

Bake is a 425 preheated oven for 25 minutes until firm to the touch... or inner temp reads 145

You will have about 1/2 Cup of mixture left over.... what do do with it????? HHHHmmmm.....

Put back in Food Processor ... add 1 Tablespoon of Dijon Mustard and 1/3 Cup White Vinegar

Turn on and drizzle in 1/3 cup Olive Oil

Here is the lettuce I packaged last week on Wed.... still green and super crispy!!! My method works people!!!

Was not using it all so I re-wrapped in in new paper towels and put back in the fridge... will be good for another 3-5 days!!!


You cannot make a good salad without drying out the lettuce.... so take it for a spin!!!

The fish came out so wonderful and moist!!!!

Try this same recipe with Chicken Breast... I am sure it will be just as good, let me know.
