Veggie Fresh Frittata

As always I had a fridge full of Veggies!!! My whole family is home this week from work and school.... so I was running out of creative ideas.  This came out so delicious!!!

VEGGIE FRESH FRITTATA

2 Baked Potatoes (I just microwaved them for about 4-5 minutes)
1 1/2 Cups Swiss Chard
1 Cup Broccoli
1 Tomato, seeded and chopped
1 Whole Shallot, diced
1 Cup Carrots, thinly diced
1 1/2 Cups Baby Bella Mushrooms, chopped
1 Cup Shredded Cheese, I used an Italian Combo... Parm, Romano, Provolone, and Mozzarella
6 eggs (one of mine fell of the counter so I only used 5, and worked just fine!)
Olive Oil for cooking












Tip.... You can cook potatoes in the microwave by washing them well, drying them and putting in the microwave for 4-5 minutes depending on the size of the potato.

Just chop them up... with the skins.

First cook the Shallots, Tomato and Potatoes... add Salt & Pepper to taste at this point. Cook for about 2-3 minutes.

Add the rest of the veggies and cook for about 3-4 minutes.

Turn heat up for a few seconds before you add the egg and cheese mixture.

Whisk eggs well, add salt & pepper and add the cheese.

Pour over mixture and spread evening over the veggie.... Turn heat as low as it will go and cover right away!!!

Leave heat on for about 2-3 minutes... Turn heat off and leave covered for about 5 minutes or until you see that the egg is cooked...

It should look like this.

Carefully put your serving dish over the skillet and flip the frittata onto your dish.

Slice and enjoy!!!!

Variations are endless.... here are some ideas:
Mexican Frittata:
Add Mexican Cheese Blend instead of Italian Cheese, some cooked Chorizo and a Cup of Salsa
You can also add a cup of Fresh Ricotta and some Italian Sausage to make it Italian inspired.
