Collard Greens and White Bean Soup

I came across some fabulous Collard Greens in my Harvest2U box.  They are tender and just beautiful.  I can't say enough about GREENS!!! Any kind... Collard, Kale, Mustard.. the health benefits are out of this world!!! This recipes is great with any Greens... even Swiss Chard!!!

COLLARD GREENS AND WHITE BEAN SOUP

3-4 Cups Collard Greens (can also use Mustard Greens, Kale, Swiss Chard, Spinach), Chopped
1 Whole Onion, Chopped
2-3 Carrots, Peeled and Sliced
2-3 Celery Stalks, Sliced
3-4 Garlic Cloves, Sliced
1 Cup Italian Parsley, Chopped (optional)
1 Can White Bean, Cannellini, or Garbanzo Beans, rinsed and drained
3 Potatoes, Peeled and Sliced
1 Teaspoon Oregano
1/4 Teaspoon Thyme
1/2 Teaspoon Peppercorns, Crushed
4-5 Tablespoons Chicken or Veggie Bouillon Powder
8 Cups Water 



I used White Kidney Beans (also known as Cannelini Beans)


Beautiful Collard Greens




In some Olive Oil start cooking the onions and garlic

Add the Collard Greens

Cook for about 3 minutes... until the Greens look wilted.

Add the Carrots and Celery, cook for about 5 minutes.

Add the Parsley

Rinse and Drain the beans and set aside.


Add the water, bouillon, herbs and pepper. Bring to boil and lower heat to simmer.

Simmer for about 15 - 20 minutes and add the beans

Add the Potatoes and simmer for another 15 minutes.


Serve with some Romano or Parmesan Shavings
