Tuscan Kale & Leek Soup


I was given a massive amount of Tuscan Kale yesterday and just had too... this nice and cool weather makes this such a welcoming meal for my babies when they get home from school.  I can't wait to serve this up! 

1 Large or 2 Small Leeks, Washed and thinly sliced
1/2-1 Pound Ground Chicken Breast
3 Tablespoons Olive Oil
4-5 Cups Tuscan Kale, Washed and Chopped
1 Can Cannellini Beans, Drained
1-2 Teaspoons Fresh Ground Pepper, (I like a lot of pepper so I used 2)
8 Cups Water
2-3 Potatoes, Peeled and Cut
3 Tablespoons Powdered Chicken Bouillon


You need to wash and dry your leeks... you will need about 2 cups worth ... 


When I don't have time to do it myself I ask the butcher to ground the chicken breast for me... 


Heat your olive oil and add the chicken and the leeks...  Cook for about 3-5 minutes until the leeks cook down and the chicken is cooked. 


Have your kale washed and chopped... 


Add to the chicken and the leeks... 


Add the beans ... 


Add the potato... 


Add the chicken bouillon and bring to a boil... reduce heat and simmer for 10 minutes...



Serve Nice and Hot with some fresh bread...
