Caramelized Fennel & Shallots


I hate black licorice!!!!  For years I refused to have anything to do with Fennel because it smelled just like it!!!  About 2 years ago I had it at a restaurant and have been in love since.  This is such a simple dish that can be used as a topper for steak or chicken... or as a side dish.  Try it at least once... you will love it!!!

2 Tablespoons Olive Oil
1 Tablespoon Butter 
4-5 Fennel Bulbs, Ends and Tops Cut of and Sliced
1-2 Shallots, Sliced
1 Teaspoon Kosher Salt
1 Teaspoon Raw Sugar
1 Teaspoon Pepper


Melt the butter and olive oil together... 


Add the fennel and shallots... 


Add the salt, pepper and sugar... 


Cook on medium and stir continuously... 


Continue to cook for 15-20 minutes... 



Serve just like this or top with parmesan cheese...
