Fergie's Homemade Granola



My husband is a granola fanatic.... I love making homemade granola for him because I can put exactly what he likes... and I know that there are no preservatives!  This granola is easy to make and a sure pleaser at your next breakfast table.

8 Cups Raw or Regular Oats, do not use instant oats
2 Cups Pecans, Rough Chopped 
2 Cups Raw Pumpkin Seeds
1 Cup Hemp Seeds, (a great protein source) 
1 Cup Walnuts, Rough Chopped
1 Cup Raw Cashews
1 Cup Honey
1 Cup Coconut Syrup, you can substitute this for Maple Syrup
1/2 Cup Coconut Oil , you can substitute with a light cooking oil, you can also reduce the amount to        1/4 cup if you wish for dietary reasons. 
1/4 Water
2 Tablespoons Good Vanilla
Pinch of Salt

Heat oven to 250.  In a large bowl combine the dry ingredients, except the salt.  Set Aside.   In a smaller bowl combine the wet ingredients and whisk together.  Pour the wet ingredients over the dry and get your hands in there.... make sure all the dry ingredients are covered. Divide into 2 Parchment covered baking sheets, spread evenly and bake for about an hour.  I like to check it after 45 minutes... I also like to crank the heat up to 300 the last 10-15 minutes to get that nice golden color.  Take out of oven and allow to cool completely (this is where most of it disappears at our house!!!) Store in air tight containers.  I like to store them in Mason Jars... different size jars... that my family can grab and go.  Enjoy!
