Mini Zucchini Fritatta's


Whipped these up for the kids this morning... took less than 5 minutes to prepare and 12 minutes in the oven... And got the kids to eat fresh veggies in the morning... go figure! 

4 Eggs
1/4 Cup Almond Milk (or any milk you have, if you wanna be really bad use cream)
1/4 Cup Cheese (I used Hard Monterey)
1/2 Cup Shredded Zucchini
2 Tablespoons Salsa (Optional) 
Pinch of Salt & Pepper 


Crack your eggs... room temperature eggs work best...


Pinch of salt and pepper... whisk for a few seconds... 


Add almond milk...  Whisk a few more seconds... 


Add the remaining ingredients... 



Generously spray with cooking spray... 


Evenly distribute the mixture... makes 9 mini fritatta...  Place in a 400 degree preheated oven... 


12 minutes and Taaaa Raaaaa....
