Fergie's Ricotta & Squash Puff Pastry


I was invited to a little "Girls Night In" and had to bring a dish.  I honestly put this together at the last minute and it was pretty delicious!  This dish is sure to impress and very simple to make. 

1 Package Puff Pastry (2 sheets) 
1 15-oz Container of Ricotta Cheese
1 Cup Roasted Butternut Squash
1 Cup Fresh Mozzarella, Shredded
1/2 Cup Parmesan Cheese, Grated
1/2 Cup Romano Cheese, Grated
1/2 Teaspoon Salt 
1 Egg White & 2 Tablespoons Water (for wash)


Defrost your pastry dough sheets by just leaving out for a few minutes... 





Combine the salt ricotta, parm, romano, and moz...


This is roasted squash from yesterday... 


Throw in the bowl and mash up together... 



Roll out one of the sheets... but not too much.... just a bit


Place the dough on a baking sheet covered with parchment paper... 


Place your mixture right in the middle of the dough... 


Fold the edges in... 


This part is very important because it will be the glue that will keep everything together... 
Mix 1 egg white with 2 tablespoons and have a pastry brush ready... 





Roll out the remaining sheet of puff pastry and using a cookie cutter 
cut shapes to cover the top using the egg wash as glue in between the layers... 


Make sure that it is all covered and brush all around with the egg wash... 

Bake at 400 degrees until golden brown... 15-22 minutes 
(I actually put mine under the broiler for 3 minutes to get the top nice and golden)


Ran outside and picked some hydrangea leaves... 


This is the beauty that I pulled out of the oven...
