This recipe was made with roasted butternut squash... I blogged how to do this...
For Spaghettie Sauce:
2 Heaping cups of Roasted Butternut Squash
1 Cup Half & Half
1/2 White Onion, Diced Small
8 Garlic Cloves, Minced
3 Tablespoons Olive Oil
1 Lb Good Quality Spaghetti, Cooked and Save the Cooking Liquid
Pinch or Salt & Pepper
Good Quality Parm or Pecorino

In a food processor or blender... Combine the Butternut Squash...
Half and Half...
Blend together...
Jake loves to help in the kitchen (in his underware)
Dice up your onions and garlic...
Heat the oil and add the onion and garlic...
Add a pinch of salt and pepper...
Add the pasta to salted boiling water...
This is what your puree should look like...
Add the puree to the onions and garlic... Cook for a couple of minutes...
Start ladling pasta water... I used about 5 ladlefulls...
You should have a smooth sauce...
Add the spaghetti...
So beautiful...
Generously cover with grated cheese...
