Fergie's Italian Wedding Soup




By far one of my favorite soups.  It has all the things I love. My kids devour this soup every single time I make it.   This is such an amazing labor of love and is my favorite soup to make when someone is sick or even bringing a big pot for that new neighbor! 
1 Chicken Breast 
14 Cups Water
1 Onion, Chopped
4-5 Cups Collard Greens, Steamed and cut into small pieces
4 Tablespoons Powdered Chicken Bouillon
2 Teaspoons Oregano
1 Teaspoon Ground Pepper 
4 Celery Pieces, Chopped
4 Carrots, Peeled and cut into small rounds
30-35 Italian Meatballs (see my recipe before) 
1/2 Box of your favorite pasta
Grated Parmesan




Cup up your veggies... 


Remove the stems... 


Line up to chop... 


Small pieces... 


Bring water to a boil and remove to a simmer... add the chicken breast, onion, chicken bouillon, oregano and pepper.  Simmer for 20 minutes.  I start the soup process by adding the greens because the longer you cook collard greens the less bitter they are.  After 20 minutes remove the chicken breast and allow to cool. Continue simmering the soup.. .


Add the meatballs.  I make my own and freeze in advance I always have homemade meatballs in the freezer... 


Add the celery and the carrots... 


Once the chicken has cooled... shred and add back in the soup... 


Continue simmering... 


Add your pasta... 


Simmer for another 5 minutes and turn off... allow to sit covered as to not over cook the pasta...
