Fergie's Chicken Chile Verde

Weather is chilly and busy days make perfect conditions for busting out the slow cooker.  This recipe takes about 10 minutes to put together and you end up with a delicious meal your family will love you for. 

6-8 Chicken Thighs or 4 Chicken Breast 
1 Whole Onion, Sliced 
1/2 Cup Cilantro, Chopped 
2-3 Cups Blended Green Chile's 
2 Tablespoons Powdered Chicken Bouillon
1 Teaspoon Oregano
1 Teaspoon Ground Pepper
1 Teaspoon Crushed Pepper, more for extra spice
4 Potatoes, Peeled and Cut into Large Chunks
1 Cup Water 


Set your slow cooker for 8 hours... start adding all of your ingredients... 


When I buy cilantro I take a cup or small jar, put a paper towel at the bottom and add about 1/2 cup of water.  Trim the bottom of the cilantro and place inside. You can do this with most herbs, and it will extend the life of them by far!


I love these packs I buy at Target because it is the perfect amount of chicken for my family of 5. 
They have the same packs in chicken breast!


It is not organic but is pretty darn close!!!


I make my own Ground Anaheim Chile sauce and freeze from Chile's I grow in my garden in the summer. 


I buy these cans at Sams Club and keep them as back up.  Just open up one of these and blend. 


Just keep adding everything into your slow cooker... 


Add your spices... 




Mix everything in the slow cooker, cover and let it do it's thing!!!!
