I wanted to find a way to add more protein to my kids breakfast. I cannot get them to eat like I do so I have to get creative when I cook for them! I experimented with this recipe this morning and it was a hit! I am excited for everyone to try it.
1 Cup Fage Non Fat Greek Yogurt
1/2 Cup Egg Whites
2 Tablespoons Agave Nectar
2 Teaspoons Vanilla
1/4 Cup Vanilla Almond Milk
3/4 Cup Unbleached Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Kosher or Sea Salt
Frozen or Fresh Blueberries (as many or as little as you want)
Combine the Yogurt, Egg Whites, Agave, Vanilla Almond Milk and Vanilla. Whisk that until mixture is smooth. Add the dry ingredients and mix until combined.
Add the blueberries...
Using a small ladle to insure same size pancakes...
Spray your skillet with PAM...
When you see bubbles... flip!
