Fergie's Fennel & Cremini Mushroom Meatloaf





This is a recipe I had been thinking about for some time now.  I am so glad I made it because it is going to knock your socks off!  So unbelievably delicious! So simple to make too.  
2 Pounds Lean Ground Turkey 
1 Fennel Bulb, Thinly Sliced 
1/4 Teaspoon Pepper
1/4 Teaspoon Raw Sugar (you can use regular sugar if that is all you have)
1/4 Teaspoon Kosher Salt 
2 Tablespoons Olive Oil
2 Cups Cremini Mushrooms, Diced Small
1/2 Cup or Egg Whites or 2 eggs 
4 Tablespoons Panko Bread Crumbs
3 Tablespoons Grated Parmesan Cheese 
1 1/2 Tablespoons Garlic Salt
1 Tablespoons Worcestershire Sauce 
1 Teaspoon Ground Pepper
1 Teaspoon Poultry Seasoning


Hello little Fennel Bulb!  Cut the end off this baby and start slicing... 


Slice it thin... 


Heat the oil in a skillet and add the fennel, sugar, salt, and pepper... cook on medium low heat until the fennel is caramelized... 


In the meantime... chop your mushrooms ... 




Add your mushrooms, caramelized fennel, worcestershire sauce, pepper, garlic salt, panko, egg whites or eggs whatever you are using and parmesan cheese to the ground turkey. 


Combine until just mixed... 


Spray your casserole with PAM... 


Add the mixture and Bake in a 400 degree oven for 1 hour...


This is the beauty that will come out of the oven!


Juice, tender and full of flavor!!!
