Roasted Green Tomato Salsa


I was in my garden and discovered there was "something" in my garden that was enjoying my Roma's more than me!  SO I was forced to harvest a bit early.  I knew that if I left them out they would ripen on their own but I decided to try this recipe instead.... and boy was it a success!!!  Enjoy!

20 Green Roma or Plum Tomatoes
1 Whole Onion, Rough Chopped
6 Garlic Cloves
5 Jalapeno
5 Serrano
5 Banana Peppers
(all stems removed)
1 1/2 Teaspoons Oregano
1 1/2 Teaspoons Kosher Salt
Olive Oil
Small Handful of Cilantro 



Place everything in a roasting pan or a baking sheet... drizzle with olive oil.


Roast in a 400 degree oven for about 35-40 minutes... 



Add the fresh cilantro and blend... I used an immersion blender 
but you can use a traditional blender. 



Makes a wonderful, fresh almost sweet tasting salsa!
