Clean Eats Curry Chicken Veggie Soup



I have been on a Clean Eating quest for a couple of weeks.  I am so passionate about Clean Eating because I feel amazing.  It is crazy to think of what good food will do to your body, your digestive system, your sleeping habits, hair, nails and skin.  Not to mention the weight loss!!!

2 Chicken Breast
1 Onion, Sliced Thin
5 Carrots, Sliced Thick
5 Celery Stalks, Sliced Thick
1 Whole Kale, Sliced Thin
1 Sweet Potato, Peeled and Diced
1 Cup Clean Eating Vegetable Puree
1 Cup Cooked Garbanzo Beans
2 Teaspoons Curry Powder
1 Teaspoon Oregano 
8 Cups of Water 

I used a pressure cooker to make this soup... (by the way, I highly recommend a pressure cooker.  Especially when Clean Eating.  You are not cooking away the vitamins)  In the pressure cooker place all ingredients in the pressure cooker and set for 35 minutes.  Shred the chicken and serve. 

If you are not using a pressure cooker bring the water to a boil and add the onions and the chicken.  Cook for about 15-20 minutes.  Take the chicken out and shred after cooling.  Add the rest of the ingredients and the chicken.  Cook for another 15 minutes.  Serve.
