Garlic Chive Vinaigrette

My CSA box had Garlic Chives in it this week... I wanted to serve my family a nice salad and came up with this vinaigrette... So why not WOW your family and make some homemade dressing... You can substitute the Garlic Chives for some Cilantro... or Basil... get creative... but use a fresh herb!!!

1/2 Cup White Vinegar
1/2 Cup Extra Virgin Olive Oil
2 Tablespoons Mayonnaise
2 Teaspoons Spicy Brown Mustard or Dijon (I meant to use Dijon and I was out, substituted for Spicy Brown Mustard and it worked amazing!!! )
1 Garlic Clove
1 Tablespoon Garlic Chives (or whatever fresh herb you are using)
Pinch of Salt and Fresh Ground Pepper to Taste 



You can either put all the ingredients in a jar and shake until creamy and well blended.. or you can use an immersion blender, blender, or food processor to get a smooth dressing. 

Makes an amazing dressing in minutes.
