Yellow Squash & Potato Gratin

The yellow squash in my CSA this week was so pretty it inspired me to make something pretty!! It's easy too!!!

4-5 Yellow Squash or Zucchini, thinly sliced
1-2 Large Potatoes, thinly sliced
1 Leek or 1 Small Onion, very thinly sliced
Cooking Oil
Parmesan Cheese
Salt and Pepper 


Cut the ends and the thin parts off the Squash

I used a mandolin but you can use a knife...  

Run the peeled potato through the mandolin ...

The the leeks or onions thinly ...

Generously oil gratin pan...

Layer leeks or onions whatever you are using on the bottom of pan... 

Sprinkle with salt and pepper ...

Layer the squash and the potatoes any way you like... 



Sprinkle each layer with salt, pepper and parmesan cheese... 





Cover and bake at 400 for 35 minutes... Uncover and raise the temp to 450 bake an additional 10 minutes. 

It is so pretty and elegant!
