Calde Verde Portuguese Soup (Thanks Teresa)



I asked my beautiful friend Teresa for a Portuguese recipe and boy did she deliver!  This is not good, it is ridiculously good!  It was easy to make and tasted so good!  



2 Tablespoons Olive Oil
2 Lbs. Chourico, Linguica, Italian Sausage (I used Turkey Kielbasa cause it's what was in the fridge) cut into 1/2 inch pieces

1 Cup Onions, Chopped Thinly
4 Garlic Cloves, Chopped
1/4Cup Fresh Parsley, Chopped
4 Potatoes, Cubed
1 Cup Dry Split Peas

10-12 Cups Chicken Stock, (I used 12 Cup of Water and 4 Tablespoons of Powdered Chicken Bouillon)
4 Cups Kale Torn into Pieces, ( I used 8 cups )
3 Bay Leaves
2 Sprigs Fresh Thyme 
Salt and pepper
Crushed red pepper


In a heavy sauce pan heat the oil and add the Onions... cook for about 2-3 minutes. 

Chop your garlic.... 

Add to the onions... 

Add your sausage and cook for 2-3 minutes...

Split Peas


Add to the soup... 

Add the stock ... 

Add the potatoes... 

Fresh Baby Kale from my Garden... 


Rough chop or tear with your hands...

Chop and add the fresh Thyme... 

Add the Bay Leaves.... 

I added 1/2 Teaspoon Crushed Red Pepper... 
Simmer on Med-High for 35-40 minutes, or until the Split Peas are soft.
