Fergie's Sweet Pepper Chicken Pasta



I did not know what to make for dinner... I looked in the fridge and threw
this together... It was easy to make and so tasty... kids are 
in heaven! 
2 Containers of Sweet Baby Peppers 
3 Carrots, Peeled & Cut
1 Onion, Sliced
4 Garlic Cloves
5 Tomatoes, Cubed
2 Chicken Breast 
3 Tablespoons Olive Oil 
Salt & Pepper 
1 Box Thick Spaghetti

These are sweet baby bell peppers... 


Combine all the veggies and toss with olive oil, salt & pepper... 


Cover the pan with parchment paper... place the veggies on the pan
and place the chicken right on top... 


Drizzle the chicken with olive oil, salt and pepper... 
Place in a 400 degree oven for 35 minutes... 


Mmmm ... 


Remove the chicken and allow to cool... 

Bring a pot of water to a boil and begin cooking a box of spaghetti... 


Place the veggies and the juices in the blender... add 
1/2 Teaspoon Salt
1 Teaspoon Oregano
1/2 Teaspoon Crushed Red Pepper
1 8-oz Can Crushed Tomatoes


Heat 1 Tablespoon of Olive Oil and simmer the sauce... 


Shred the chicken... 


Add to the sauce... 


Add the drained spaghetti... 


Toss together..






You know you want some Milly.....
