Fergie's Pesto Pasta Salad




Every time I make this pasta salad I get so many compliments and I can't help but to chuckle because it is so very easy to make... Wait till you try it!  This makes a huge bowl ... enough to feed up to 15 people!


1 Box of Your Favorite Pasta
1 Small Bag of Shredded Carrots
1 Small Red Onion, Sliced Thin 
2 Cups Spinach, Chopped into Thin Slices
1/2 Jar of Marinated Artichokes, Chopped 
1 Cup Crushed Tomatoes 
1/2 Bag Petite Sweet Peas
3/4 Cup Pesto 
1/2 Cup Mayo
1 1/2 Cups Fat Free Greek Yogurt 
1/4 Cup Dijon Mustard
1 Teaspoon Ground Pepper 
1/2 Cup Rice Wine Vinegar 



These are the artichokes I used... 


I only use 1/2 a Jar but you can use the whole jar if you like artichokes... 
Drain the liquid and chop... 


Throw the noodles, onions, carrots, spinach, artichokes, tomatoes, and peas... 


These are my favorite peas, sweet, crisp and so tasty! 


I make my own pesto and freeze it... this is my homemade arugula pesto. 


In a bowl I combine the yogurt, mayo, pesto,  mustard, pepper and rice wine... 


Whisk until smooth... 


Combine all the ingredients, cover and allow to sit in the fridge for at least an hour before serving...
