Tacos de Papa


So there are several dishes that my mom would use to comfort me... dishes that still bring on wonderful memories. This is such a dish.  When I was walking home from school I could smell these a block away!  It is not the healthiest of dishes but I have tweaked the recipe a bit to make it a little healthier by using ground turkey breast, not deep frying, not using butter or gobs of cheese. Enjoy! 

3-4 Potatoes, Peeled and Cut
1 Onion, Chopped
4-5 Garlic Cloves, Chopped
1 Pound Ground Turkey Breast (you can use Ground Chicken or Beef as well)
1 Tablespoon Chicken Bouillon, Powdered
1 Teaspoon Oregano
1/2 Teaspoon Ground Cumin
1/2 Teaspoon Ground Pepper
20 Corn Tortillas
Cooking oil (do not use Olive oil)
Lettuce, Tomato, Sour Cream and Salsa




Boil the potatoes until very soft... 





Heat about 1 Tablespoon of oil and add the onion and garlic... cook for about 2-3 minutes.


Add the ground turkey and break up... 


Add the bouillon, and spices... 


Cook for another 5-8 minutes until meat is fully cooked. 


I use a large ricer... makes life so much easier... you can mash the potatoes with a fork or a masher...



Add the potatoes to the meat and mix well... 



Heat the tortillas a few at a time to soften them... 


Put some of the mixture in the middle and fold over... 


Make all the tacos... at this point you can put some in a freezer bag to fry another time... 


Add just a small amount of oil... just enough to coat the bottom of pan... heat the oil.


Pan fry until golden brown... 



I place them sideways in a paper towel lined colander to drain some of the oil... 




Serve with some rice and beans... 
Fill with Lettuce,  Tomato, Sour Cream, Salsa, or better yet my Creamy Avocado Sauce... Recipe in Blog!!!
