1 lb Ground Turkey Breast
4 Cups Pinto Beans or 2 Cans Pinto Beans, No Salt
1 Onion, Diced
1 Large Tomato, Diced (I used an Heirloom)
1/2 Cauliflower, Chopped Small
1 Red Pepper, Diced
4 Garlic Cloves, Chopped
2 Tablespoons Cooking Oil
2 Tablespoons Cooking Oil
1 Teaspoon Sea Salt
2 Teaspoons Ground Cumin
1 Teaspoon Oregano
2 Teaspoons Chile Powder (More if you want it spicy)
1 16 oz Can of Organic Tomato Sauce
1 16 oz Can of Organic Tomato Sauce
Chop the Onion, Tomato, and Cauliflower...
Heat the oil in a large skillet and add the Onions, Tomato, Cauliflower and Ground Turkey...
Break it down and continue to cook.
Chop up the red bell pepper...
Chop up the garlic... and add the pepper...
Add the salt and the spices...
Cook for 5 minutes...
Add the tomato sauce...
Add the beans with bean juice...
Simmer another 10-15 minutes...
It was amazing... the kids even asked to have some for breakfast!
